The Plant: Lemon
The lemon tree is originally from Southeast Asia and belongs to the Rutaceae family. Lemon is the fruit of Citrus x limon. Lemon juice contains approximately 500 mg of Vitamin C and 50 grams of citric acid per liter. Lemons also possess limonene, a volatile organic terpene found mainly in citrus peel responsible for their fresh, characteristic aroma.
One of the most widely used fruits worldwide, lemons contain B-complex vitamins, pro-vitamin A (carotene), and Vitamin A in the fresh pulp and juice. They contain high concentrations of mineral salts and trace elements such as calcium, iron, silicon, phosphorus, copper, magnesium, and iodine, as well as citric and malic acids.
